Baked Chicken with Almond Butter Source

Ingredients for Chicken


  • 1 chicken boneless breast
  • 1 small chopped onion
  • Cajun spice seasoning – to taste
  • Salt and pepper to taste
  • 2 tbsp grated parmesan cheese
  • 3 tbsp mix of grated cheddar and mozzarella cheese

 

Ingredients for Almond Butter Sauce


  • 100ml soya milk
  • 2 tbsp almond flour
  • 2 tbsp grated cheddar/ mozzarella
  • Salt and pepper to taste
  • 1 cup broccoli – cut to small pieces
  • 1 tbsp butter
  • 2 tbsp chopped almonds – optional


 

 

 

 

 

 

 

Instructions

Chicken

  1. Wash and pat dry the chicken breast.
  2. Make a slit through the middle lengthwise but don’t cut right through. This creates a pocket in the chicken breast.
  3. Marinate the chicken with the salt, pepper and Cajun spice mix.
  4. Stuff the pocket of the chicken with chopped onions and grated cheddar/ mozzarella.
  5. Brush your baking pan with grape seed oil. Put the chicken on the pan and sprinkle with the parmesan cheese.
  6. Bake in the oven at 250 C till chicken is cooked.

Almond Butter Sauce (serves 1)

  1. Heat pan over fire and add butter till melted. Add soya milk and almond flour.Simmer for a few minutes.
  2. Then add salt and pepper, broccoli and cook for a minute.
  3. Add cheese whilst stirring as sauce will thicken.
  4. Add a little more soya milk if too thick.
  5. Top with chopped almonds and pour over baked chicken.
