Baked Chicken with Almond Butter Source
Ingredients for Chicken
- 1 chicken boneless breast
- 1 small chopped onion
- Cajun spice seasoning – to taste
- Salt and pepper to taste
- 2 tbsp grated parmesan cheese
- 3 tbsp mix of grated cheddar and mozzarella cheese
Ingredients for Almond Butter Sauce
- 100ml soya milk
- 2 tbsp almond flour
- 2 tbsp grated cheddar/ mozzarella
- Salt and pepper to taste
- 1 cup broccoli – cut to small pieces
- 1 tbsp butter
- 2 tbsp chopped almonds – optional
Instructions
Chicken
- Wash and pat dry the chicken breast.
- Make a slit through the middle lengthwise but don’t cut right through. This creates a pocket in the chicken breast.
- Marinate the chicken with the salt, pepper and Cajun spice mix.
- Stuff the pocket of the chicken with chopped onions and grated cheddar/ mozzarella.
- Brush your baking pan with grape seed oil. Put the chicken on the pan and sprinkle with the parmesan cheese.
- Bake in the oven at 250 C till chicken is cooked.
Almond Butter Sauce (serves 1)
- Heat pan over fire and add butter till melted. Add soya milk and almond flour.Simmer for a few minutes.
- Then add salt and pepper, broccoli and cook for a minute.
- Add cheese whilst stirring as sauce will thicken.
- Add a little more soya milk if too thick.
- Top with chopped almonds and pour over baked chicken.
